ORGANIC HOMEMADE RAW MUSELI BARS


I have been so sick of yucky, sugary, expensive store bought muesli and protein bars and decided to make my own yesterday and boy they were probably the best things I've ever tasted! They require no cooking so they are completely raw and I used organic ingredients so they are packed with goodness. Keep them sealed in an airtight container in the fridge and they will last up to 5 days…so for uni students, your set for the week…unless your family suddenly likes them and in that case, hide them somewhere safe...(yes Mum I'm talking about you!)

Makes 10 Bars

Ingredients:
1 1/2 cups rolled oats (you can toast them before if you wish but I was to lazy…and hungry)
`1/4 cup pumpkin seeds
1/3 cup desiccated coconut
1/4 cup almonds chopped coarsely
3Tbs chia seeds
1/4 Cup Goji berries
1/4 cup natural honey
1/4 cup of organic peanut butter/ almond butter
1 1/2 Tbs Organic coconut oil
(You can also add a few scoops of protein powder if you wish)

Method:
1. Mix all nuts/ oats/ seeds/ protein powder together in a bowl so it is combined.
2. Warm peanut butter, coconut oil and honey in a small saucepan until in liquid form.
3. Pour mixture over dry ingredients and combine in a bowl with a spoon until the mixture sticks together.
4. Lay flat in a rectangular shape on a baking tray covered with baking paper. 
5. Flatten top of the mixture and sprinkle with left over chia seeds.
6. Put tray in the freezer for 15-20 minutes or until the mixture is hard and won't crumble straight away.
7. Take out and cut into 10 bars, then sit back marvel and devour!
