I can't remember the last time I had fries and I really miss them but I always remember the saying, 'A minute on the lips, Forever on the hips'. Today at work someone had these amazing smelling chips and I got food envy big time. When I got home I found some sweet potato and thought, 'why not' it's almost like the real thing. It was even better and most importantly, it was totally guilt free.
Serves 1 for a light snack
INGREDIENTS
1/2 Sweet Potato
1 1/2 Tablespoons of Coconut oil - melted in a small pan
Cracked pepper
Sea salt
Rosemary is optional
METHOD
Preheat oven to 180 degrees.
Cut sweet potato in to 2cmx2cm fries and place in a bowl.
Drizzle the melted coconut oil over the chips.
Add the cracked pepper and sea salt.
Mix together with hands so that every chip is covered.
Place on a tray lined with baking paper so that none of the chips are touching.
Place in the oven and cook for 20-25 minutes or until crispy.
Take chips out and sprinkle over a little more sea salt.
Devour.
